How is Kombucha made?

Kombucha is made by taking dissolving sugar and putting it into non chlorinated boiling water. The idea by doing this is it boils the sugar down to its core components so that it isn’t lumpy or too sugary when put into the drink. 

Once the sugar has been boiled in the water, tea leaves are put into the sugary water in order that the flavor from the leaves can be infused with the sugary water.

This creates the basis for the kombucha drink as kombucha is designed to be a form of iced tea. 

The tea leaves are then removed, and something called SCOBY is added.

SCOBY is the anagram given to a cultivated mixture of yeast and healthy bacteria (there are of course two types of bacteria – good, healthy bacteria that we all have in our bodies, and which helps to protect us and bad bacteria which is derived from rotting food) which is important if you want to create a food or drink that has a rich taste to it.

As kombucha does have such a rich taste then the addition of SCOBY is important to give its full flavor. 

After the SCOBY is added, the kombucha is left to ferment for a period of time. When fermentation is over the SCOBY is removed, the kombucha is stored away, ready for consumption at a later date.

You see caffeine is naturally present in most tea leaves because of the chemical composition of tea. Tea that specifically says that it is caffeinated says so because the tea producers have had to go through to extract the caffeine. 

However, unlike coffee or even normal tea, the amount of caffeine that is contained within kombucha is relatively small.

Kombucha contains about 8 and 14 milligrams per 8 fluid ounces which is a relatively small amount compared with the caffeine contained within coffee. That’s why kombucha, although containing a certain amount of caffeine, doesn’t contain nearly as much as a cup of caffeine.

So, if you want to still get a caffeine kick then you would have to drink a hell of a lot of kombucha to get the same caffeine buzz that you’d get from a few cups of coffee. 

How much sugar is in Kombucha?

Now that we’ve addressed how much caffeine is in kombucha, let’s look at how much sugar there is in kombucha.

As you might imagine, given how kombucha is made, there is a certain amount of sugar in it. The answer is that it depends on which brand of kombucha you decide to buy.

Some brands that produce kombucha put in quite a lot of sugar, some as high as 28 grams worth – equivalent to 7 teaspoons full of sugar. 

However, there are also many other kombucha producers who put much less sugar into their drinks – they average about 4 grams of sugar and are, if you are looking at cutting out as much sugar as possible, much better for you than the higher brands. 

This is why it is always important to check labels to ascertain what exactly is contained within the products you buy.
